Basic noodle soup 清湯麵

After making this basic noodle soup, I don’t think I’ll ever eat instant noodle again! From start to finish, I think it probably took me less than 10 minutes to have a bowl of hot noodle soup ready for dinner.

This noodle soup brings back childhood memory growing up in Taiwan. At home, mom always made simple noodle soup just like this with the leftover chicken soup. Noodle shops or noodle street vendors in Taiwan all have this basic noodle soup on the menu. People often order a few small appetizer dishes to go with the noodle. If you are feeling fancy, you can also order a big piece of fried pork chop.

The soup is seasoned with salt, white pepper and sesame oil. How good the noodle taste will depend on the quality of the chicken stock you use. Home-made stock will taste superior than store-bought stock.

Simple yet flavorful. Quick and easy. This will definitely be my go-to dish whenever I feel like have a bowl of hot noodle soup.
